Every autumn, one thing is certain: the pumpkin spice latte is back! For many, this is when warm sweaters officially make their appearance and comforting recipes begin. The question then arises: how did a simple autumn drink become a cultural phenomenon? After 23 years, it's interesting to understand why it's still being talked about.
The History of the Pumpkin Spice Latte
It was in 2003 that the Pumpkin Spice Latte, or simply PSL, officially appeared on Starbucks menus. Peter Dukes, the chain's product manager, aimed to create a drink with traditional autumn flavors. The chosen approach was to play with the flavors found in various autumn pastries already sold in the Coffee Shop: cinnamon, nutmeg, pumpkin, etc. From that moment on, the pumpkin latte became an icon and has been sold hundreds of millions of times worldwide.
The concept is actually quite simple: espresso, milk of your choice, a touch of sweetness and a blend of spices (or even a delicious spiced pumpkin syrup!).

Why is the pumpkin spice latte so popular?
One might think that the drink's popularity depends solely on its taste, but many factors are at play.
First, there's nostalgia. The flavors associated with pumpkin, cinnamon, or cloves can easily evoke memories of warm, homemade desserts or traditional family recipes. The spicy taste brings back childhood memories of spending time with loved ones around a delicious apple pie, or enjoying a cozy breakfast with a cinnamon bun.
Along the same lines, the spiced pumpkin latte has a very comforting quality. When the temperature drops, a warm latte automatically replaces iced summer drinks. What's interesting is that even though the drink is served cold, the cinnamon and other spices create that feeling of warmth and comfort.
Third, there's the whole autumnal aspect. The fact that the Pumpkin Spice Latte is only sold in the fall motivates people to consume the drink because it's available for a limited time. Coffee shop customers patiently await its release and make the most of it while it's available.
Finally, there's the social media phenomenon. As soon as the first pumpkin spice drinks appear in various locations, coffee shops post content, people share their orders, and film their reactions. It's a true social phenomenon that becomes an unmissable trend in the fall.
It's not necessarily pumpkin-flavored!
It's important to note that when we talk about Pumpkin Spice, we're referring to a blend of spices, not pumpkin itself. Traditionally, the blend consists of cinnamon, ginger, nutmeg, and cloves. These spices evoke autumn desserts, even without pumpkin. This is an interesting distinction because, for coffee lovers, it makes it easier to recreate the flavor profile of a pumpkin spice latte. However, the simplest solution is still to buy a pre-made pumpkin spice syrup.

The PSL Variations
The pumpkin spice latte has spawned several other variations. Seeing its success, coffee shops have begun experimenting with different, sometimes unusual, flavors. While some of these coffees are controversial, here are a few recipes that might surprise you:
The apple-cinnamon latte is another type of spiced latte, highlighting the quintessential autumn fruit: the apple. Simply prepare a spiced apple syrup and pour it into a regular latte.
This recipe connects to the PSL (Pure Snow Latte) by evoking the season and offering a different flavor to your latte. Simply whip cream with a touch of maple syrup in a glass to create a comforting cold foam.
The perfect drink for a day when the ultimate goal is to read a book under the covers! The blend of chai concentrate, espresso, and milk is perfect for cooler mornings.
We're big fans of Espresso Martini at Barista, so a more autumnal version was in order! Simply add caramel, a blend of sugar and autumn spices, and 2 oz of pumpkin puree to completely transform the cocktail.
