Looking for recipes that include our Hot Piri Piri Coffee sauce that’s already in your pantry? Well, look no further. We tried this easy and endlessly customizable recipe for our work lunches and our verdict is: DELICIOUS! So here it is, our caffeinated piri piri chicken poke bowl.
Serves 4.
Ingredients
Marinade
½ bottle Barista Hot Piri Piri Coffee sauce, created in collaboration with Les Aliments Mi Corazon
1 pinch of pepper
1 tsp of our Coffee Rub, also created in collaboration Les Aliments Mi Corazon (can also use a pinch of salt)
Spicy Mayo
½ bottle Barista Hot Piri Piri Coffee sauce
½ cup (125 mL) of mayonnaise
2 tbsp (25 mL) water
Bowl
4 cups cooked rice
2 grated carrots
1 cucumber
1 onion minced or thinly sliced
1 tbsp (15 mL) butter
4 or 5 chicken thighs
Instructions
Combine all the ingredients for the marinade in a bowl.
Place the chicken in an airtight container and cover it with the marinade and let it rest overnight in the fridge.
Put all the ingredients for the spicy mayo in a small bowl and mix until combined.
Cook the marinated chicken in the butter, either in the oven at 425 °F for 20 to 30 minutes or on the BBQ (check for cook times based on your BBQ).
In each bowl, add rice, vegetables, and one chicken thigh cut into strips, then drizzle the spicy mayo over the bowl.
Ta-da! You can now serve a delicious caffeinated piri piri poke bowl!
