Alex welcomed Sophie from Oatbox to the Café Show and, much to our delight, she baked us, live, a waffle recipe. Deliciously chocolatey, with a tasty Cremone whipped cream and a generous dose of chocolate granola, this recipe is perfect for your weekend brunches! Make yourself a cup of coffee and get out your waffle irons!
Ingredients
For the waffles (makes 8 waffles)
- 2 3⁄4 cups flour
- 1⁄4 cup extra raw cocoa powder
- 1⁄2 cup sugar
- 3 teaspoons baking powder
- 1⁄2 tsp. salt
- 1⁄4 cup canola oil
- 2 tsp. liquid vanilla
- 2 1⁄2 cups soy milk
For the whipped cream
- 275g mascarpone cheese
- 2 tbsp. sugar
- 2 tsp groundCremone espresso (or other espresso blend)
- 1/2 cup whipping cream
- 2 tsp vanilla extract
Preparation
- In a bowl, combine flour, sugar, baking powder, salt and cocoa powder.
- Pour the oil, vanilla and vegetable milk into the bowl of your stand mixer. Pour the dry ingredients, all at once, over the liquids and whisk gently until the dry ingredients are incorporated.
- Heat your waffle iron on Classic mode. Add 1/2 cup of mixture per waffle and cook according to your waffle maker's instructions.
- In a large bowl, using an electric mixer, whip the cream for one minute, until it begins to thicken.
- Add all the other ingredients and beat until the cream is uniform and smooth.
- Serve with chocolate waffles, whipped cream and chocolate granola.
If you don't want to put whipped cream on your waffles. You can eat them with plain yogurt, maple syrup or even a chocolate spread chocolate spread like Stefano's hazelnut and cocoa spread or Favuzzi spreads.
