Ingredients
- 1 jar of mascarpone (400g)
- 1 cup pumpkin puree
- 4 egg yolks
- 1/2 cup whipping cream
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin spice
- 2/3 cup white sugar
- 4 oz espresso
- 2 to 3 teaspoons brown sugar
- Ladyfinger cookies
- Caramel (optional, for garnish)
Steps
1. Prepare the mascarpone mixture
- In a large bowl, combine the mascarpone and pumpkin puree.
- Add the egg yolks and mix well.
- Stir in the whipping cream, vanilla extract, pumpkin spice, and white sugar. Blend until smooth.
2. Brew the coffee
- In a separate bowl, mix the hot espresso with the brown sugar until dissolved.
3. Assemble the tiramisu
- Dip the cookies in the coffee mixture, then place them in the bottom of a dish.
- Spread a layer of the mascarpone and pumpkin mixture over the cookies.
- Repeat for a second layer: soaked cookies, then mascarpone mixture.
4. Refrigerate and serve
- Cover the dish and let it rest in the refrigerator for at least 3 to 4 hours.
- Before serving, add a drizzle of caramel on top if desired. Enjoy!
