We had a treat today and it was so good we had to share the recipe for it; delicious coffee ice cream sandwiches! Enjoy them to cool down on a hot day, or for a morale boost on a rainy day! 😉 Any reason is a good reason to eat an ice cream sandwich! 🍨

Ingredients

  • 4 cups vanilla ice cream

  • Around 20 cookies of your choice (we used chocolate pizzelles and graham crackers)

  • 1 cooled short double espresso (2 oz)

Instructions

  1. Add the vanilla ice cream and the cooled shot of double espresso to a large bowl.

  2. Use a hand mixer to combine the ice cream and espresso for about 30 seconds.

  3. Use a spatula to spread the caffeinated ice cream onto half of the cookies.

  4. Close the sandwiches with the rest of the cookies.

For those who would prefer other ice cream flavours, chocolate or hazelnut also work wonderfully in these ice cream sandwiches!
