This unexpected combo of coffee and drumsticks, created by Café Barista’s Managing Director Laurent, will blow away your friends and family at your next barbecue. This coffee-rub recipe is a must try.


Ingredients

Barbecue Sauce

  • 2 tbsp of butter

  • 1 yellow onion, minced

  • 1 clove of garlic, chopped

  • 1 cup of liquid coffee (espresso or filter)

  • 1/4 cup of molasses

  • 1/4 cup of maple syrup

  • 1/2 cup of ketchup

  • 2 tbsp of apple cider vinegar

  • 1 tbsp of Worcestershire sauce

  • 2 tbsp of smoked paprika

  • 1 tbsp of mustard powder

  • 1 tbsp of ground pepper

Coffee-rubbed Chicken Drumsticks

  1. 8 chicken drumsticks

  2. 1/4 cup of coffee rub

  3. Barbecue sauce


Preparing the Barbecue Sauce

  1. Caramelize the onions with butter in a saucepan over medium heat.

  2. Add the garlic, coffee, molasses, and maple syrup.

  3. Reduce the liquid by half.

  4. Add the ketchup, vinegar, Worcestershire sauce, and spices.

  5. Mix well and simmer until desired consistency is reached.

  6. Blend for a smooth texture and set it aside.


Preparing the Coffee-rubbed Chicken Drumsticks

  1. Coat the drumsticks with the rub.

  2. Put them in the smoker for an hour at 250 °F.

  3. Heat the barbecue to 400 °F.

  4. Brush the drumsticks with barbecue sauce and finish cooking them on the grill, making sure to brush them regularly so that they become glossy and caramelized.

  5. Add grilled vegetables and enjoy!
