A Perfect Recipe to Make for Your Special Someone for a Valentine’s Day Brunch!

Espresso-Based Pancakes

Ingredients

  • 1 cup all-purpose flour
  • 1 tbsp (15 ml) sugar
  • ½ tsp salt
  • ½ cup milk
  • 1 shot of espresso (cooled)
  • 1 egg
  • 2 tbsp melted butter
  • ½ tsp vanilla extract
  • Sliced strawberries
  • Coffee-infused maple syrup

Instructions

  • In a large bowl, mix the flour, sugar, and salt.
  • In another bowl, whisk together the egg, milk, cooled espresso, and melted butter until smooth.
  • Heat a large non-stick pan over medium heat and grease it with a teaspoon of butter.
  • Pour about one cup of batter at a time into the pan for each pancake.
  • Cook the pancakes for 2 minutes or until bubbles form on the surface, then flip and cook for another 1 to 2 minutes. Set aside the cooked pancakes on a plate.
  • Once the pancakes are ready, top them with sliced strawberries. Generously drizzle with coffee-infused maple syrup, then enjoy!
