Espresso-Based Pancakes
Ingredients
- 1 cup all-purpose flour
- 1 tbsp (15 ml) sugar
- ½ tsp salt
- ½ cup milk
- 1 shot of espresso (cooled)
- 1 egg
- 2 tbsp melted butter
- ½ tsp vanilla extract
- Sliced strawberries
- Coffee-infused maple syrup
Instructions
- In a large bowl, mix the flour, sugar, and salt.
- In another bowl, whisk together the egg, milk, cooled espresso, and melted butter until smooth.
- Heat a large non-stick pan over medium heat and grease it with a teaspoon of butter.
- Pour about one cup of batter at a time into the pan for each pancake.
- Cook the pancakes for 2 minutes or until bubbles form on the surface, then flip and cook for another 1 to 2 minutes. Set aside the cooked pancakes on a plate.
- Once the pancakes are ready, top them with sliced strawberries. Generously drizzle with coffee-infused maple syrup, then enjoy!
